9. Pandan Butter Cake

Ingredients

230 g cake flour
1 tablespoon corn starch
1 tablespoon baking powder
1/2 teaspoons vanilla extract
1/2 teaspoons salt
30 g milk powder
200 g granulated sugar
200 g salted butter, Golden Churn brand
5 eggs chilling
30 g evaporated milk
50 g pandan leaves juice concentrate
1/2 teaspoons food color(green apple)
greased baking pan (3x7x3.5 inch)  line bottom with wax paper

Directions

  1. Sift together cake flour, corn starch, baking powder, vanilla extract, salt and milk powder, eventually mix.
  2. Beat the butter with sugar in the mixer using a flat beater on medium speed for 10 minutes. Change the speed to low, add chilling egg and flour mixed. Next, beat in remaining on medium speed for 4 minutes then change the speed to low after add evaporated milk, pandan leaves juice concentrate and food color. Beat until batter smooth or eventually combine; set aside.
  3. Pour batter in prepared pan and bake at 350oF for 45 minutes, or until brown.
  4. Remove cake from pan, leave to cool or rest overnight before serve.
