12. Cinnamon Shell Sea Bun
Ingredients
800 g bread flour
200 g whole wheat flour
150 g granulated sugar
20 g salt
15 g bread improver
10 g fast-raising active dry yeast
100 g salted butter, Golden Churn brand
2 eggs
500 cc cool water
egg white beat with water for brush the glaze
granulated sugar mix with finely ground cinnamon for sprinkle
greased bread pan (1/4 lb size)
honey for the topping
Directions
- Beat bread flour, whole wheat flour, sugar, salt, bread improver, and yeast in the mixer. Add egg and cool water, knead thoroughly. Knead in remaining butter for 12 to15 minutes or until smooth.
- Divide the dough into 80 g each, flatten dough into rectangle to form a thin sheet. Brush the dough with egg white beaten, sprinkle with water and cinnamon sugar. Roll thin sheet dough into round and divide into 6 parts equally. Place in the pan, cover and leave dough until it has fulled in size.
- Bake at 350oF for 15 to 20 minutes or until golden brown. Delicious topped with honey.
