1. Coffee Cinnamon Cookies
Ingredients
380 g all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
2 teaspoons cinnamon
50 g finely ground roasted almond
250 g salted butter, Golden Churn brand
150 g icing sugar
1 egg
1 tablespoon instant coffee power
1 tablespoon coffee essence liquid
greased baking sheet
ground cinnamon for decorating
Directions
- Sift the flour, dry ingredients and mix with finely ground roasted almond using rubber spatula until combine; set aside.
- Beat the butter with icing sugar in the mixer using a flat beater on medium speed for 6 minutes. Add egg, instant coffee power dissolve with coffee essence liquid and flour mixed, beat until combine.
- Turn the dough on star tube in bag decorating and press it off onto the baking sheet.
- Bake at 400-420 oF for 5 to7 minutes, leave to cool and then transfer the cookies to bake at 300-350 oF for 10 to15 minutes or until crispy.
